
Saturday night I couldn’t shake my hankering for something sweet. I didn’t want to totally ruin all the healthy eating I have been doing but I didn’t want to deny myself either.
Enter these healthy and delicious mini-delights I’ve aptly titled “amazeballs.” I’ve been seeing them all over pinterest and decided to give them a try.
The best part is that these No Bake Energy Bites take literally 5 minutes to whip up, require zero baking and can be made with ingredients you probably have lying around your house already!
Supplies:
1/2 cup of organic peanut butter ( I also used reduced fat)
1/3 cup of honey
1 cup of whole grain oatmeal
1/3 cup of dark chocolate chips
1 tsp vanilla
1/3 cup of coconut.
To Make:
-Heat peanut butter over medium heat until thick and creamy.
-Add honey, oatmeal, vanilla, dark chocolate and coconut.
-Combine until all ingredients are well mixed.
-Pour into bow (& try not to eat at this stage :] ) and let chill for 30 minutes in freezer.
-Remove from freezer and let chill in the refrigerator for another 30 minutes before serving.
Recipe makes 24 (110 calories each), so indulge in a few and share with your friends. These are a great, guilt free way to get your sweet tooth fix but remember everything in moderation.
Also get creative! The peanut butter, honey and oatmeal are the base but everything else can be substituted. Next time I plan to try nuts, raisins, cranberries and flax seed.
